As a designer, what do you request a client writes in a design brief?
I'm trying to work out whether the designer I generally hire is incredibly picky, or I'm just not descriptive enough. ;o

It depends on what the project is. I was taught that the designer should have a list of questions for their client because the client usually doesnt know what to expect. If the designer is asking you the questions then he isnt being picky, but if he is trying to get you to explain to him exactly what you want then he is being picky. He needs to come to you with a bunch of questions, should take 5minutes to answer them all and then he should be ready to make it.

I don't design much but when I do I usually want to know if the client prefers any specific colors or a specific structure. I have worked with people that have a specific margin they want because its their favorite number.

Design briefs pretty much outline requirements such as colours, features and fonts or logos the client wants or needs in the design. And also other factors such as target viewers. so the more of this info you have the easier it is to design

My design brief/need analysis is a few pages long, have everything I need in it. Took a while to do it all up as you always forget a few things until you get one back and you can't go forward without them extra details.
